INTRODUCTION
The receipes in this cook book are a collection from: the Y.W.C.A. Saturday afternoon International Cooking Class, the Y.'W.C.A. Summer School Y'Teen Club Cooking Class, and from Y.W.C.A. members and friends. Therefore, you will find receipes for Ethiopian dishes and for dishes from many countries, but all will be suitable for the high altitude of Addis Ababa (7,500 ft.). Ifthe baking receipes are used at a lower altitude, adjustments must be made in the quantities of flour, liquid and baking powder. Also, each variety of food will be preceeded by "Useful Facts" and"Food Value", as taught in the Y.W.C.A. classes. The introductory pages will give other helpful information in using this cook book.
Our gratitude goes to those who have eontributed their favorite receipes, to those who have helped in the preparation, and to the Y.U.C.h. Secretarial School for their help in some of the typing.
The proceeds from the Y.W.C.A. "Around The Injera Basket" will be used toward the construction of a new Y.W.C.A. building, on the new land site, made possible through a generous gift by His Imperial Majesty, Haile Selassie I.
